I want to sew a piece of soft fabric to the back of my hand knitted dog blanket. How do you suggest I do it?

By hand is probably best. I would chose a knit since the facing should have some elasticity too and be of similar fabric, i.e. both are made of acrylic/polyester/wool etc. – this should be beneficial to the care of the fabric too (washing/drying) –
You could use the stitch as if to sew a seam or some decorative, showy stitch as part of the design. Good sources if you need help with stitches are craft books (your local library!) or a friend who sews….
